Day One – Friday 19 July 2013
Guests will arrive on Hayman via luxury launch and settle into a beautiful Lagoon Suite for the weekend. In the evening, pre-dinner drinks will be held in the Club Lounge where you will be introduced to your host, Peter Bourne and the Hayman team. A three-course à la carte dinner artfully paired with wines from Brown Brothers’ Vineyards will then be held in Fontaine, Australia’s signature resort restaurant.
Day Two – Saturday 20 July 2013
Enjoy beachfront breakfast in Azure followed by a few hours at leisure before attending a Shiraz Syrah MasterClass hosted by Peter Bourne. Compare new wave Shiraz styles with traditional warm-blooded types and benchmark Syrah and then test your sommelier skills in a three-way taste-off. Later in the evening, you are invited to The Chef’s Table in the Main Kitchen featuring a 6-course degustation menu, which will be hosted by the Hayman Chefs with matching wines selected and introduced by Peter Bourne.
Day Three – Sunday 21 July 2013
Following breakfast, take some time to relax or participate in activities throughout the resort or choose to head out for a half-day fishing expedition*. A casual beachside luncheon will be held at noon at the Beach Pavilion followed by a sumptuous seafood buffet in the evening for dinner. Those who embarked on the fishing expedition have the option of having their catch of the day prepared by the Hayman Chef’s and presented during dinner.
Day Four – Monday 22 July 2013
Hayman and Gourmet Traveller WINE farewell departing guests and invite guests extending their stay to continue to enjoy the variety of experiences available on this celebrated Australian private island destination.
